๐ฅข Ingredients (2–3 servings)
- Pork shoulder (thinly sliced) 600 g
- Onion 1/2, sliced 1 cm thick
- Korean green chilies (Cheongyang) 2–3, sliced on a bias
- Green onion 1/3 stalk, sliced on a bias
- Cooking oil 2 Tbsp, toasted sesame seeds, black pepper
๐ถ️ Sauce Ratio (for 600 g pork)
- Gochujang 3 Tbsp
- Gochugaru (Korean chili flakes) 2 Tbsp
- Minced garlic 1 Tbsp
- Sugar or maesil (plum extract) 2 Tbsp
- Soy sauce 1 Tbsp
- Black pepper, to taste
Adjustments: Less sweet → 1.5 Tbsp sugar. Spicier → +0.5 Tbsp gochugaru or extra chilies.
๐งฐ Tools
- Mixing bowl (stainless preferred)
- Measuring spoons
- Deep skillet or wok
- Tongs or spatula, serving plate
๐ฉ๐ณ How to Make (25–30 min)
- Prep: Slice onion (1 cm). Cut green onion & chilies on a bias. Cut pork into bite-size pieces.
- Make the sauce: Mix gochujang, gochugaru, garlic, sugar/maesil, soy sauce, and pepper.
- Marinate: Coat the pork evenly; chill 30 min if time allows for deeper flavor (OK to cook right away).
- Scallion oil: Heat 2 Tbsp oil with green onion over high heat for 3 minutes to infuse aroma.
- Stir-fry pork: Add pork; cook over medium 6–8 min until no pink remains. Brief high heat to evaporate moisture for a glossy finish.
- Finish with veg: Add onion and chilies; stir-fry on high 2 minutes to keep them crisp. Turn off heat and sprinkle sesame seeds.
๐ก Tips
- Cut choice: Pork shoulder is lean yet juicy; for richer flavor, mix in a little pork neck (collar butt).
- Moisture control: Short bursts of high heat prevent a watery sauce and boost sheen.
- Clean look: Keep vegetables minimal—onion, chilies, green onion—for neat color and texture.
- Make-ahead: Marinate up to 12 hours in the fridge for weeknight speed.
⚠️ Notes
- Cook pork thoroughly until no pink remains and juices run clear.
- Too many vegetables can muddy the look and dilute the sauce.
๐ฝ️ Serving ideas: Over steamed rice, in lettuce wraps, or as a lunchbox main.
